MOCHA COCONUT SINGLE-SERVE COOKIE🍪☕️

My first time making a single-serve cookie recipe and now all i’m thinking is why did it take me so long??? Coffee + coconut was a combination that has been in my head for a while now and she did NOT disappoint! Next time you have some leftover coffee, definitely try this out and lemme know what you think! 🤝

INGREDIENTS:
– 1/4 cup oat flour
– 1 tbsp + 1 tsp cocoa powder
– 1 tbsp coconut sugar
– 2 tbsp coffee
– 1 tsp vanilla extract
– 1 flax egg
– 1/4 tsp baking soda
– 1/4 tsp baking powder
– pinch of flakey sea salt
– chocolate chips + coconut measured by your heart🥺

Preheat oven to 350 and combine all of the ingredients except for the chocolate chips and coconut in a bowl. Fold in the chocolate chips. I used lilys_sweets dark sea salt (highly recommend adding in an extra pinch of salt if you don’t have these! Shape your cookie (it’s super sticky so don’t be afraid to get messy) and transfer to a parchment paper lined baking tray. Press shredded coconut into the outline of the cookie. Bake for 12 minutes!!
