MINI NO-BAKE VEGAN CHEEZECAKES❤️ lemon + caramel crunch flavours 🌱
These have been on my radar for a while now but i’ve been out of cashews…so lemme tell you, i was PSYCHED to see them arrive in our foodfundcanada delivery over the weekend 🙌! These are PERFECT for a spring/summer evening treat and the ingredients are 🤌🥵🤪
CRUST:
– 1 cup oats
– 1/2 cup pecans
– 1/2 cup walnuts
– 2 tbsp shredded coconut
– 3 tbsp maple syrup
– dash of sea salt
Add to a food processor and pulse until ingredients come together. Scoop and flatten into muffin pan. Let sit in refrigerator.
LEMON FLAVOUR:
– 1 cup cashews
– 1/3 cup almond milk
– 2/3 cup lemon juice (i like mine suuuper lemony)
– 1 tsp vanilla
– 2 tbsp maple syrup
– pinch of sea salt
CARAMEL CRUNCH FLAVOUR:
– 1 cup cashews
– 1 tbsp lemon juice
– 1/3 cup coconut sugar
– 1/2 cup almond milk
– 1 tsp vanilla
– pinch of sea salt
– pecans on top for some crunch!
Pre-soak your cashews in hot water so they’re easier to blend! Add all ingredients to a blender + blend until smooth. Pour on to your crust + let it set in the fridge for 4-6 hours until hardened! ENJOY🌱🤍
