LOADED SWEET POTATO NACHOS 🤍🌱

This has to be one of my favourite dinners I’ve had in a long time. Sweet potatoes are such a versatile vegetable and easily my favourite thing to cook with at the moment. There’s so many benefits to eating sweet potatoes, the list is endless. I always find excuses to add them to my meals because they taste like a party in my mouth in my humble opinion✨ Enjoy this delicious and healthy twist on a classic food choice! 🌱

INGREDIENTS:
– thinly cut sweet potatoes
– 1/4 cup black beans
– 1/4 cup corn
– 1/4 chopped white onion
– 1/4 cup shredded lettuce
– 1/4 diced red onion
– tex mex seasoning
– guacamole, hot sauce for serving

Cook your sweet potatoes in an air fryer for 15 minutes. I seasoned mine with a bit of garlic powder, paprika, black pepper and sea salt. Sauté black beans, corn and white onion in the same spices. Once potatoes are finished baking, arrange flat on a plate. Top with your bean mixture, lettuce, red onion, guac + whatever else your heart desires🤍🌱
