WALNUT ZUCCHINI MUFFINS đŸ§đŸ„’

Another zucchini recipe because hiding veggies in dessert is my new favourite thing đŸ€«đŸ€« Also, who doesn’t love a fresh muffin in the morning? It’s such a simple and quick snack or breakfast treat!

INGREDIENTS:
– 2 & 1/2 cup oats blended
– 2 very ripe bananas
– 1/3 cup almond milk
– 1/2 cup maple syrup
– 1 & 1/2 TBSP apple cider vinegar
– 1 TSP baking sofa
– 3/4 TSP baking powder
– 3/4 TSP sea salt
– 1 TBSP vanilla extract
– 1 TBSP cinnamon
– 1 TSP nutmeg
– 1 cup peeled & grated zucchini
– 1/2 cup crushed walnuts

Preheat to 350. Blend oats into a flour and then add the remaining ingredients except for the zucchini and walnuts! Blend until it all comes together. Add the zucchini and walnuts and mix to combine by hand. Lightly spray a muffin pan and then evenly distribute the batter. Bake for 15 minutes or so ✹✹
