Happy Toast Tuesday🤝🤎 Leveling up from plain ol’ PB + J or avocado toast with this mashed chickpea salad on top of fresh sourdough bread! This is one of my favourite things to eat…full of protein, fibre and important minerals like magnesium + calcium….DELICIOUS and NUTRITIOUS is forever the vibe😎

Chickpea Salad:
– 1/2 cup of mashed chickpeas
– 1 tsp vegan mayo
– 1 chopped dill pickle
– 2 tbsp diced red onion
– 2 tbsp diced celery
– salt, pepper, paprika to taste
– balsamic reduction drizzle if you’re feeling fancy 💅
