MOCHA COCONUT SINGLE-SERVE COOKIEšŸŖā˜•ļø

My first time making a single-serve cookie recipe and now all iā€™m thinking is why did it take me so long??? Coffee + coconut was a combination that has been in my head for a while now and she did NOT disappoint! Next time you have some leftover coffee, definitely try this out and lemme know what you think! šŸ¤

INGREDIENTS:
– 1/4 cup oat flour
– 1 tbsp + 1 tsp cocoa powder
– 1 tbsp coconut sugar
– 2 tbsp coffee
– 1 tsp vanilla extract
– 1 flax egg
– 1/4 tsp baking soda
– 1/4 tsp baking powder
– pinch of flakey sea salt
– chocolate chips + coconut measured by your heartšŸ„ŗ

Preheat oven to 350 and combine all of the ingredients except for the chocolate chips and coconut in a bowl. Fold in the chocolate chips. I used lilys_sweets dark sea salt (highly recommend adding in an extra pinch of salt if you donā€™t have these! Shape your cookie (itā€™s super sticky so donā€™t be afraid to get messy) and transfer to a parchment paper lined baking tray. Press shredded coconut into the outline of the cookie. Bake for 12 minutes!! ENJOYšŸŒ±
