VEGAN STUFFED PEPPERS🌶🫑
Shared these to my story yesterday and wanted to give them a little love on the feed too because why not🤪 I seriously forgot stuffed peppers existed and it’s safe to say that I will be incorporating them into my meals more often now😎 They’re soooo simple to make and can be customized with a variety of flavssss that you want so go crazyyyyy!
INGREDIENTS:
– 1-2 cups cooked quinoa
– 1 can drained black beans
– 1/2 white onion diced
– 1/2 zucchini sliced and chopped
– 1/2-1 cup of tomato sauce
– 3 TBSP nooch
– 1 TBSP cumin
– 1 TBSP chili powder
– salt and pepper to taste
– top with chili flakes, fresh herbs, vegan cheese etc.
Preheat oven to 400 and mix all stuffed pepper ingredients in a bowl. Slice peppers lengthwise and remove seeds. Equally distribute the filling into the peppers. Cover with tinfoil and cook for 30-40 minutes until peppers are soft and cooked through! Remove foil, add vegan cheese (if using) and bake for 10 more minutes! Enjoy🌱
